Do you need to laugh today?  Make some Chunky Monkey Ice Cream, give it to your kids and see how they react.

Ok, so I really don’t usually let Regan sit on the kitchen floor to eat…it was just one of those random moments in the middle of our day…don’t ask…

(I can tell you this though, the reason she’s eating like she’s in a pie eating contest is because she said the bowl was ‘hot’, she doesn’t know how to say cold yet, my interpretation, it was too cold to hold it with her hands…)

That doesn’t matter though, all that matters is she liked it!  A SUPER simple recipe for a really good, cold, tasty treat for a really hot summer day.  This is what you do:

Take 3 bananas.  Peel them, cut them into chunks and freeze until solid.

Take out the food processor (I have come to love mine lately) and process until smooth scraping the bowl as needed.  This will take 5ish minutes or so.

Mix in walnuts, chocolate chips, peanut butter, coconut, any other ingredient you love to eat with banana.  I just added a couple Tbsp of PB.

And…whala

you have yourself a smooth, creamy, ice cream-like…Chunky Monkey concoction!  You’ve gotta try it!

I would have never known this could happen with frozen bananas unless I would have come across the idea here.  Thanks Kitchen Simplicity!

    I am going to put bananas in the freezer right now and if they are frozen tomorrow afternoon Elijah will get this treat! I love that photo of her by the way!
