Jan Hagels — A Christmas Cookie must!  Maybe it’s because I’m Dutch and Jan Hagles are a traditional Christmas cookie for my family but I love these things, which surprises me since there is not a hint of chocolate in the recipe.  Try them yourself, you won’t be disappointed!

Jan Hagel Cookies

1 Cup butter or margarine

1 Cup sugar

1 egg yolk (save white)

2 Cups flour

1/2 tsp cinnamon

1/2 tsp vanilla

Topping:

1 egg white

1/2 Cup chopped nuts of choice

2 tsp water

Cream butter and sugar until light and fluffy.  Add egg yolk and vanilla.  Beat well.  Stir in flour.  Press batter on cookie sheet (a large one or a sheet pan).  When pressing on sheet leave a border on all sides (if using cookie sheet).  Combine water and egg white.  Brush on batter lightly.  Sprinkle with nuts.  Bake at 300 for 3040 minutes or until very lightly browned.  Cut immediately and remove when cool.
