Still working my way through The Deen Bros. Cookbook. This and my next post I believe will be my last two recipes I try out of this cookbook for a bit. I need to return it back to the library — I’ve renewed it too many times! This is more of a BBQ Sauce recipe then anything. I liked the BBQ sauce, it had a nice kick to it along with a touch of sweetness. I’m not sure about the BBQ Chicken thing though…I left the skin on — not a big fan of that.
When you make BBQ Chicken, do you leave the skin on or are you a skin puller (or maybe buy it without this skin already removed)? Leave a comment for me, I’d love to know!
The Deen Brothers’ BBQ Chicken
1 cup ketchup
1/4 cup packed dark brown sugar
2 tbsp orange juice
1 tsp Worcestershire sauce
1 tsp liquid smoke
1/2 tsp dry mustard powder
1/4 tsp cayenne pepper
1 – 31/2 lb chicken, cut up (or already cut up chicken)
Preheat oven to 375 degrees or prepare a grill (brush the grill grate lightly with oil).
In a large bowl stir together all ingredients except the chicken. Reserve 1/3 cup of the barbecue sauce; set aside. Add the chicken to the remaining sauce in the bowl, turning to coat.
Arrange the coated chicken in a roasting pan or on the grill. Cook (covered, if grilling) for 40-45 minutes or until cooked through, basting with the reserved 1/3 cup sauce after 20 minutes.
Makes 3 to 4 servings.
