This is one of those recipes I made a while back…I think it was in the first month after my daughter was born. I just saw a picture in a computer folder and realized I never got around to posting it yet. Such as life with a new baby! By the way, she hit her first big milestone, she flipped from her back to her stomach two weeks ago! Here’s a picture from a few weeks ago riding on the pontoon. We hope to get her on skis by the end of the summer :)
Back to the salad. I would consider this a great salad for this hot and humid summer we have had. It’s very refreshing. You could either eat it with a spoon, or on chips like a salsa or even through some in a tortilla shell.

Black Bean & Mango Chicken Salad
1/2 lb boneless skinless chicken breasts, grilled, cut into bite-size pieces
1 can black beans, rinsed
1 pkg frozen corn, thawed
1 cup chopped mangos
1/2 cup chopped red peppers
1/3 cup chopped red onion
1/3 cup chopped cilantro
1/4 cup lime juice
1 envelope good seasons Italian dressing mix
Combine above ingredients.
