Well, it’s been over a month since my last post.  My time has been spent taking care of the little one (although in my eyes she’s not so little anymore!) and last week vacationing at the cottage.  Much of my time on the computer has been uploading pictures pictures and more pictures.  unfortunately not many of those picture are of food.

My husband and I made burritos tonight.  It didn’t even cross my mind to grab the camera and take a picture…they were good.  I’ve only been to Chipotle once, my husband has been a number of times so we attempted to recreate their burritos.  I made the rice, salsa and marinated the steak in the morning, so when supper time came all that needed to be done was grill up the steak.

I found the recipes for the marinade and rice here:  Chipotle Fan.  Although, I made a few adjustments.  I used a dried salsa pkg and roma tomatoes for the salsa.  We were both very pleased with how the burritos turned out.  We will for sure be making these again!

Steak Marinade

1 tsp black pepper

1 tsp cumin powder

1 tsp Chili Powder

1 1/2 Tbsp dried Oregano

4 lrg garlic cloves

1/2 onion, quartered

1/4-1/2 cup canola oil

1 1/4 lb top sirloin steak

Place all ingredients expect the steak in a blender.  Puree until smooth.

Spread mixture over steak and refrigerate at least one hour up to 24 hours.

Heat grill to 400 degrees and grill turning only once until done, 5-7 minutes per side.  Let sit for the juices to redistribute and slice against the grain in thin slices.

Yield:  Four burritos

1 tsp butter

2 Tbsp fresh cilantro, minced

2/3 cup brown rice

water (enough to cook rice according to pkg directions)

1/2 tsp salt

1 lime

In a saucepan, heat butter over low heat until melted.  Add the rice and lime juice, stir for 1 minute.  Add water and salt, bring to a boil.  Turn the burner down to simmer and cook rice until tender and water is absorbed (according to pkg directions).  Fluff rice with a fork and add cilantro.

Take a burrito size flour tortilla and place some rice in the middle in a rectangle shape.  Place some salsa on top of the rice and then add a few slices of steak.  Fold the two short ends in and start rolling from one end to the other until.  Pick it up and enjoy!

Additional toppings/add-ins:  fajita veggies, sour cream, guac, lettuce, beans
