Wow, I just noticed I haven’t posted for…almost a month!  Funny thing is I’ve had this one in my draft posts for a while, so here you go, another appetizer that is a hit!  It’s perfect for any party especially with tomatoes starting to come in season. Enjoy!

Bruschetta

1 1/2 lbs Roma Tomatoes

1 tsp salt

1 clove Garlic, chopped fine

1 Tbsp fresh basil, chopped

2 Tbsp fresh parsley, chopped

1/4 cup Extra Virgin Olive OIl

2 Tbsp Balsamic Vinegar

Fresh Ground Pepper

Italian or French Baguette, sliced

Cut the tomatoes into a small dice,transfer them to a strainer and toss with salt.  Allow to drain for 30 minutes.

Preheat the broiler and brush the sliced bread with olive oil, sprinkle with salt and pepper and toast until gold brown (watch them carefully, they only take a few minutes!)

In a medium bowl, combine the drained tomatoes with the garlic, basil, parsley, balsamic vinegar and gradually whisk in the olive oil until well blended.  Season with pepper to taste.

Optional:  Sprinkle with Romano or Parmesan cheese before serving.
