
Corn & Bean Dip
16-17 oz bag frozen corn
2 cans black beans, rinsed
1 medium red onion, diced
2 ripe avocados, diced
3 lrg beef tomatos, seeded and diced
1/4 cup minced cilantro
1 lime, juiced
1 Tbsp apple cider vinegar
In a large bowl, mix frozen corn, beans, onion, tomatoes, cilantro and vinegar. Add avocados and lime juice, and stir some more until blended.
Serve with tortilla chips.
Makes enough dip for 3 bag of Tostitos Scoops.
